Our red wines 

We offer different red wines : Les Rièges from Mas de Valériole and the Cocardier from the Domaine Saint Vincent.
And a brand new ones : "Beauduc and Gueritou"...
 
Both have a distinguish bouquet and exceptional aromas. They are the good choice for all your culinary wishes.

Cocardier Red

Grape varieties: Merlot / Cabernet-Sauvignon 

Tasting notes: Fine bright ruby colour. The nose is delicate, lightly smoky,
hints of wild strawberrys and blackcurrant. The mouth is round and
expressive on black fruits with silky tannins. Fresh and silky final.

 

Food pairing: grilled beef, roast lamb, cold meats, and goats’ cheese.

 

Serving temperature: 16°C

 

Available: Cocardier - 75 cl

Beauduc without sulphites Red

Grape varieties: Marselan (cross of Grenache/Cabernet Sauvignon)

Tasting notes: Deep red colour with violet glints.
The nose shows notes of black fruits, fresh liquorice and violet. Mouth of liquorice,
cherries and grey pepper. The tannins are soft and delightful. Fresh final.

 

Food pairing: grilled beef fillet, Camargue bull gardianne (a local type of en daube), Chateaubriand, unpasteurised Brie, 18-month matured Cantal, chocolate soufflé.

 

Serving temperature: 16°C

 

Available: Beauduc 75 cL

Les Rièges Red

Grape varieties: Marselan (cross of Grenache/Cabernet Sauvignon)

Tasting notes:  Intense colour of a shiny ruby. The nose is fresh, with crystallized cherry, violet and fresh liquorice aromas.

 The attack is soft, the tannins are silky, the aromas are the same that the ones of the nose. The finish is persistent and soft.

Food pairing: grilled beef fillet, Camargue bull gardianne (a local type of en daube), Chateaubriand, unpasteurised Brie, 18-month matured Cantal, chocolate soufflé.

Guéritou Red  "cuvée without sulphites"

Grape varieties : Secrete recipe

Tasting notes: Fruit, freshness and pleasure.

Elixir created in honor of the founder of the estate Docteur François de Valeriolle wich will take care of all your ills.

 

Food pairing : Dining aperetive, tapas, delicatessen and cheese boards to share.

 

Service temperature :16-18°C

Available : Guéritou - 75 cl

Cham-Cham Red

Grape varieties : pur Marselan

Tasting notes : Powerful nose, cherry and red fruits notes, lightly toasted. The mouth is powerful, fresh with fudgy silky tannins. The finish shows notes of panettone. Great aging potential.

 

Decanting 1 to 2 hours.

Food pairing:  A stew, an Aubrac entrecote, a tournedos Rossini.
